We LOVE a Cocktail! This is The Bee’s Knees

With the weather as it is I thought that a cocktail might be just what the February doctor ordered. Now the Bee’s Knees might not be hot cocktail but it does contain honey and lemon – so almost like an alcoholic Lemsip right? Legend has it that this drink was invented in prohibition times and the honey and lemon was used to disguise awful homebrewed bathtub gin. However, in more recent times it’s been credited to a Paris socialite who survived the sinking of the Titanic and it was then known as ‘The Unsinkable Molly Brown’ – we know which one we prefer!

You will need (for one serving):

2tsp clear honey

50ml London dry gin

20ml lemon juice

10ml orange juice

Strip of lemon zest to serve

Mix the honey in a bowl with 1tbsp of boiling water and allow to cool. Once it has, put it into a cocktail shaker with the gin, citrus juices and ice. Shake and then drain into a martini glass or coupe. Garnish with the lemon zest.
